1988 ««« Drink now to soon.
A generous forward style showing richness and weight, but probably not for the long haul.
1989 ««« Drink now.
Medium-deep crimson. Attractive blackcurrant pastille, herb garden and tobacco aromas, mid-palate sweet fruit density and chocolaty dry but persistent tannins. A surprisingly good wine illustrating the strength of multi-vineyard sourcing and strict classification of fruit.
1990 ««««« Drink now to 2030.
Medium-deep crimson. Beautifully developed wine with blackcurrant, black cherry and ground coffee aromas. Richly flavoured with ample blackcurrant, cherry and underlying chinotto/cola notes, fine supple-yet-firm dusty tannins and fresh integrated long mineral acidity. Generous and vigorous in structure. Classic Bin 707.
A fine example of a mature Coonawarra cabernet sauvignon with its great complexity, length and balance. (JH)
Cassis, liquorice, spice and tobacco aromas. Weighty, velvety and round with generous fleshy dark fruits and smooth dense tannins. (JR)
1991 ««««« Drink now to 2035.
Medium-deep crimson. Fresh espresso, earthy, blackcurrant and cranberry aromas with chestnut mocha notes. Generous and supple with sweet fruit cassis flavours, some leafy capsicum
notes, fine chalky-grainy tannins and plentiful mocha vanilla oak. Finishes grainy firm with plenty of fruit sweetness and emerging polished leather notes.
Intense ripe blackcurrant/cassis aromas with a touch of capsicum. Powerful and layered with deep-set fruit, structured tannins and vibrant acidity. (NB)
Bin 707 first, cabernet second. (PG)
1992 ««« Drink now.
A robust wine with attractive richness but powerful and firm iron-fisted tannins.
1993 «« Drink now.
Not a great Bin 707. Distinct capsicum and silage notes with sappy textures. Still holding but not worth keeping.
1994 «««« Drink now to 2040.
Deep-medium crimson. Intense blackcurrant, mulberry, mocha and praline aromas with sous bois leafy notes. Buoyant and fresh with complex blackcurrant panforte flavours, fine loose-knit graphite, slightly leafy tannins and underlying mocha American oak. Finishes gravelly leafy firm.
At the cusp of ripeness with elegance and moderate tannins. (JH)
Superb colour, intensity and chocolaty richness. Still a long way to go even though the tannins are well integrated. (JR)
