FERMENTATION
Open headed-down fermenters and small stainless steel static fermenters.
MATURATION
Matured in 100 percent new oak for up to 16 months.
COMMENTS
A style that combines the elegant ripe cassis flavours and fine-grained textures of Coonawarra cabernet sauvignon with the chocolaty richness of Barossa Valley shiraz.
2005 ««««« Drink now to 2035.
Medium-deep crimson. Intense and lifted blackcurrant pastille, dried plum, mulberry and graphite with capsicum notes. Well-concentrated and balanced with blackcurrant pastille and inky plum flavours, fine, loose-knit and grippy textures and underlying roasted walnut notes. Finishes grippy dry with underlying sweet fruit notes.
Powerful cherry, plum and tobacco aromas. Broad and weighty with fleshy textures, smooth tannins and roasted nut complexity. (JR)
Quite developed with plentiful dried black fruits and cedar notes. Very smoothly textured with supple tannins and seamless integration of oak. (FW)
2015 ««««« Drink 2022 to 2040.
Deep crimson. Youthful elderberry, dark plum, blackcurrant and cedar aromas with camomile and floral sage notes. Classically proportioned and elemental with ripe and pure juicy dark berry, dark chocolate and mocha flavours. Fine-grained vigorous tannins, attractive mid-palate richness and long, fresh but integrated acidity. Will develop further.
The exuberant blueberry dark berry fruits of shiraz and vegetal cabernet characters are beginning to work together. Granular firm, almost grippy on the palate. (NB)
