Bin 407 Cabernet Sauvignon is a multi-regional South Australian wine. In warmer vintages the wine is predominately sourced from the Limestone Coast including Coonawarra, Robe, Wrattonbully and Bordertown. In cooler years, the sourcing goes further north into McLaren Vale, Barossa Valley and Clare Valley.
The overall winemaking style is based on the Penfolds method and oak maturation in American and French oak, including second-use Bin 707 hogsheads. The wine has evolved in style over the last 30 years with the fruit gaining more prominence and the oak increasingly moving into the background. This vigorous style lies in the slipstream of Bin 707 and has gained a strong following for its assertive textbook cabernet structure.

Medium-deep crimson. Fresh cedar, herb garden, chinotto, barnyard and black olive aromas with cassis and leafy aniseed notes. Concentrated but sinewy wine with cedar, leaf, dried rose, blackcurrant and sappy flavours, fine and bitter grainy tannins and fresh, long leafy notes.
Horse saddle/farmyard characters dominate the aromas, but the palate is a lot more enjoyable. (JR)
Still showing freshness and varietal typicity, despite the barnyard notes. Gently bloody/meaty with supple yet granular tannins. Drink soon. (NB)

Medium-deep crimson. Intense blackcurrant, green pepper and earthy aromas with dark chocolate, roasted walnut and polished leather notes. The palate is full bodied with fine-grained leafy tannins and cedar oak notes, but the fruit is drying out.
1992 ««« Past.
Medium-deep crimson. Tertiary polished leather, tobacco leaf and dark chocolate dominate the wine. The tannins are assertive and grippy dry. All bone, muscle and sinew.

Medium-deep crimson. Minty blackcurrant, dark chocolate and panforte aromas and flavours accompanied by cedar, walnutty and silage-like notes. A dense palate with sappy grippy tannins.

Medium-deep crimson. Attractive blackcurrant and dark chocolate aromas with tobacco leaf and mint notes. Fully mature brambly wine with earthy blackcurrant leafy flavours and fine-grained tannins.

Medium-deep crimson. A sturdy wine with plentiful dark chocolate and dark berry notes. The structure is austere with pronounced muscular dry tannins and marked acidity.

Medium-deep crimson. Intense blackcurrant, mocha/praline aromas with herb garden and mint characters. Ample and richly flavoured with mature cassis and dark chocolate notes, vigorous fine-grained tannins and integrated mocha/cedar oak. Still holding well. A classic Bin 407 vintage.

Medium-deep crimson. Fully developed with redcurrant, capsicum and tobacco leaf aromas and flavours with lifted menthol notes, fine grainy firm tannins and pronounced acidity.
