Chardonnay.
ORIGIN
A cool-climate style usually from Tumbarumba, NSW (with the exception of Orange, New South Wales in 2007 and Henty, Victoria in 2011). Sourcing has evolved to Adelaide Hills, South Australia and Tasmania in recent vintages.
FERMENTATION
50 percent whole bunch and 100 percent barrel fermented in seasoned French oak barriques. 25 to 30 percent new French oak since 2017.
MATURATION
Matured for around 10 months in seasoned French oak barriques. Battonage, or lees stirring, is regularly carried out to build up overall palate richness and flavour complexity.
COMMENTS
Sealed with screwcap in all markets.
