Our cutting-edge, cool-climate chardonnay. Bin 311 truly reflects the winemakers’ mantra of going where the fruit grows best and where it best suits style. In true Bin 311 style, not unlike Yattarna, it exhibits lemon/lime aromas and a mineral acid backbone, complemented by barrel fermentation and maturation in oak.
The first vintage of Bin 311 was produced in 2005 and was sourced solely from Tumbarumbar. Over the years, it began to reveal its own distinct personality, and so evolved to multi-regional sourcing in order to achieve a continuity and consistency of style.
Today, fruit is sourced from high altitude/low latitude vineyard sites, where depth of character and bright natural acidity are paramount.
True to House Style, Penfolds Bin 311 Chardonnay takes advantage of our classification system, which often sees the inclusion of some material initially earmarked for our Yattarna Chardonnay. Barrel fermentation and lees stirring are often employed to build richness and flavour complexity. Typically, Bin 311 Chardonnay is fresh and crunchy with fragrant white peach, pear skin aromas, flinty complexity, creamy textures and long indelible acidity.
