Cabernet sauvignon and Penfolds have been intrinsically linked since the Grange trials of the 1950s. Since then it has been an integral component of every Collection release, whether as a singular expression or as a component of a blend.
Similarly to shiraz, cabernet does well to reflect the Penfolds House Style; showcasing complexity and structure to aid graceful cellar development, while remaining approachable in its youth.
Our best-known cabernet expressions include Bin 707 and Bin 407, as well as Bin 169 Coonawarra Cabernet Sauvignon.
In recent years, we have ventured beyond Australia, pioneering international releases and collaborations in California and France.
Examples from California include; Bin 704 Napa Valley Cabernet Sauvignon, which stands as an inspired ‘mirror' image of its Australian Bin 407 stablemate, and Quantum, which blends prized cabernet sauvignon from Napa Valley with pedigreed shiraz from South Australia. In France, the French Winemaking Trial (FWT) joins the other famous ‘trials’ of RWT, Yattarna and Grange; as well as Penfolds II, a cabernet merlot produced in collaboration with respected Bordeaux winemaking house, Dourthe.

Cabernet sauvignon is often referred to as the ‘King of the Grapes’ due to it being the world’s most planted and because it features in many of the world’s most sought-after wines – namely, our flagship Penfolds Bin 707 Cabernet Sauvignon and the rare and highly coveted Penfolds Block 42 Kalimna Cabernet Sauvignon.

When it comes to cellaring red wines, the choice comes down to each person’s individual palate. Some may prefer the youthful vibrancy and juicy fruit characters of our wines upon release, while others may prefer to allow their wines time to evolve and develop complex characters.
Bin 407 Cabernet Sauvignon is a bold, dynamic and vigorous wine that showcases complexity and structure to aid graceful cellar development, while remaining remarkably approachable in its youth. It is often given an approximate drinking window of 30 years upon release. We suggest buying six or a dozen from the same vintage so that you may be able to experience its evolution, shared with close family and friends.
First released from the outstanding 1990 vintage, Bin 407 has grown in stature and evolved in style over its three decades. This powerful expression of South Australian cabernet sauvignon has always followed Penfolds philosophy of robust fruit and oak maturation.
Recent years, however, have tempered oak presence to reveal varietal character in greater definition. Like Bin 28 and Bin 311, Bin 407 is representative of our multi-region approach to fruit sourcing. Rather than being restricted by regional boundaries, Bin 407 pursues its own distinct style, with each release revealing a consistent personality with subtle nuances coming from varied vintage conditions.
