Reserve Bin A is a premium single-region chardonnay wine sourced from several vineyards in the Adelaide Hills, particularly those located in Birdwood, Balhannah, Piccadilly, Woodside, Morialta and Gumeracha. Most of the vineyards lie along a long stretch of varied, cool micro-climates along higher elevations in the hills.
Yields are kept low to maximise flavour development and balance. Fruit is hand-picked into small bins and then whole-bunch pressed. A portion of the juice is allowed to undergo a natural fermentation, in barrel, without inoculation. We then mature the wine in barrel and on its own solids, with regular yeast lees stirring (bâttonage) to enhance mouthfeel and complexity. We also allow all natural, full malolactic fermentation to take place to soften the edges and bring further depth to this character-full wine.
