At 33, Max Schubert dared to revolutionise Australian winemaking. He brought to life a new wine style and followed his ambition to make “a great wine that Australians would be proud of”.

Australian shiraz is typically much riper than European-style Syrah. The sweetness is a big draw with these pairings, and once you bring the structure of the Cabernet into the blend you can be adventurous. Think big flavours and spice. The style acts as a congruent pairing.
Vegetarian: Hearty and weighty is an obvious go to with rich styles of Shiraz Cabernet blends, mushroom and pepper sauce risotto. Rich, creamy lentil stews
Cheese: Strong hard cheeses are a no brainer with this style of wine. In some cases, the fruit sweetness from Australian Shiraz can happily sit with mild blue
'Meat' Option: There is a reason why local wines go well with local cuisine, and the stereotype can be true with Australian Shiraz Cabernet. Think smoked brisket, slow cooked meats, flamed charred ribs with sweet, rich sauces or lamb
While seafood is a go-to pairing partner, refined rich dishes work well as a contrasting pairing.
Vegetarian: Margherita pizza... Sounds strange, but the mildness and clean finish of the mozzarella pairs well. Light food styles can also work well, however think of the acidity from the wine as a cleanser. Creamy pasta style dishes with mild spices (avoid heat)
'Meat' Option: Crab cakes, or (Scallop) chowder is an ideal pairing. Poultry will also work. For example, creamy mustard and tarragon chicken
