About Penfolds Bin 707 Cabernet Sauvignon
The full-bodied, rich, and powerful Bin 707 Cabernet Sauvignon, Penfolds first commercial release of a single cabernet-based wine, is linked to Max Schubert’s dream of making a great Australian red wine that could last at least 20 years. Today, Bin 707 carries the legacy of Penfolds pioneering spirit and can cellar for up to 40 years.
Coonawarra and Barossa Valley, particularly the Kalimna and Koonunga Hill vineyards, have been at the heart of the Bin 707 Cabernet Sauvignon since the 1970s. More recently, Robe, Padthaway and Wrattonbully vineyards in South-East South Australia have been added to the sourcing list.
Bin 707 unfurls an impressive array of flavours. The palate is enrobed in velvety tannins, bestowing upon this wine an exquisite depth and impeccable structure.
Frequently Asked Questions about Penfolds Bin 707
Does Penfolds Cabernet Sauvignon age well?
Penfolds Cabernet Sauvignon is crafted for longevity. Bin 707 is crafted to cellar beautifully for decades under the right conditions — ideally between 14–16°C in a dark, humidity-controlled environment. Over time, the wine develops complexity, evolving from bold dark fruit and savoury tannin structure into layers of tobacco, cedar, and earth. Explore our
Cellaring Guide to learn more about ageing your wine.
What does Cabernet Sauvignon pair with?
Cabernet Sauvignon’s depth and structure make it a natural match for rich, savoury dishes. Bin 707, in particular, pairs beautifully with dry-aged beef, lamb roasted with rosemary, or slow-braised short ribs. Its firm tannins and concentrated fruit profile complement robust, umami-rich flavours. For more pairing inspiration, explore our

Does Cabernet Sauvignon need to be chilled?
Penfolds Cabernet Sauvignon should never be served cold — but temperature plays a vital role in the experience. We recommend serving Bin 707 at 18–20°C to allow the wine’s aromatics, structure, and flavours to unfold in the glass. Double decant at room temperature and allow the wine time to breathe before serving. Discover more in our
Serving Your Wine guide.
